Vineyards

The grapes, sourced from the gravelly soils typical of Rutherford, were harvested at optimal maturity to ensure a balance of intense fruit flavors and structural tannins. After careful sorting and destemming, the grapes were fermented in temperature-controlled stainless steel tanks to preserve the integrity of the fruit and facilitate the extraction of color, flavors, and tannins. This controlled fermentation also allowed for the development of a complex flavor profile, foundational to a premium Cabernet Sauvignon. Following fermentation, the wine underwent malolactic fermentation to soften the acidity and enrich the mouthfeel, adding a creamy texture to the robust tannins. The maturation process involved aging the wine in French oak barrels for several months. A mix of new and used barrels was selected to impart depth and complexity while ensuring that the oak flavors were well-integrated and complemented the wine’s natural fruit characteristics without overpowering them. This strategic use of oak was essential to develop the wine's depth and enhance its aging potential, while maintaining the elegant profile typical of Rutherford Cabernet Sauvignon.
