Vineyards

Harvested at optimal ripeness from the district's well-drained volcanic soils, they were carefully sorted and destemmed to ensure the highest quality. Fermentation took place in temperature-controlled stainless steel tanks to preserve the integrity of the fruit and facilitate controlled extraction of tannins and color, enhancing the wine's structure and depth. Following fermentation, the wine was aged in French oak barrels, a significant portion of which were new, to add complexity and roundness to the palate. This oak aging process, typically lasting 18 to 24 months, imbued the wine with subtle notes of vanilla, toast, and spice, complementing the natural dark fruit flavors and the characteristic minerality of Stags Leap Cabernet Sauvignon. The careful balance of new and used barrels ensured that the oak elements enhanced rather than overwhelmed the wine's varietal character. The result is a sophisticated, well-structured Cabernet Sauvignon with a potential for aging, showcasing the distinctive elegance and power of the Stags Leap District.

Wine

On the nose, it offers a sophisticated array of aromas, including ripe blackberries, plums, and a distinctive floral note of violets, complemented by subtle undertones of mocha and sweet spice from careful oak aging. The palate is rich and full-bodied, with a silky texture that envelops the mouth. Flavors of dark fruit are perfectly balanced with fine-grained tannins and a refreshing acidity that leads to a long, graceful finish. Notes of cedar and graphite add complexity, making this wine not only a pleasure to drink now, but also promising for future aging. This 2023 Stags Leap District Cabernet Sauvignon is a luxurious expression of its terroir, ideal for pairing with rich meat dishes or savoring on a special occasion.
